As the autumn season unfolds, our talented chef at Lymm has crafted a delicious and wholesome recipe for families to try at home: Pumpkin and Sweet Potato Mozzarella Slices. Packed with seasonal ingredients and bursting with flavour, this comforting dish is perfect for cosy evenings in. Why not get the children involved too? It’s simple, fun, and a great way to introduce them to the joy of cooking!
Ingredients:
500g of bread flour
250ml lukewarm water
30g yeast
1 tablespoon mixed seeds
½ tablespoon chia seeds
200g pumpkin and sweet potato, blended
Garlic butter and mozzarella for topping
Method:
In a large bowl, add the the bread flour, mixed seeds, chia seeds, yeast, the blended pumpkin and sweet potato and lukewarm water and mix until well combined.
Line a baking pan with parchment paper and place the mixture inside.
Leave the dough to prove for about 90 minutes, until the top becomes nice and bubbly.
Preheat your oven to 210°C. Bake the loaf for 22 minutes (it may need a couple of minutes longer but check it around this time).
After baking, cut into slices, add a generous layer of garlic butter and mozzarella on top of the bread slices and pop it back in the oven for an additional 15 minutes, or until the mozzarella is golden and melted.
